EU4 plays more like a board game whereas Vic3 is more of a simulation. EU4's mechanics are more disconnected and everything you do will have an immediate impact on something, but that impact rarely extends beyond getting some modifier.

I'd argue that a week in Vic3 is more equivalent to a day in EU4/CK3, it just takes vastly longer to process. The 4 ticks per day are utterly useless and days themselves don't have much point.
