Same problem here. Many of the dargyns that spawn don't count - I don't think any with a prefix like 'tusk dargyn' count. I'm on 6/12 of killing dargyns whilst aimgliding and just killed a whole bunch during missions that didn't count at all. The ones that start on the ground definitely don't count, even if you allow the pilots to get in.

I did manage to do it with Limbo. Not sure if they changed the way Stasis in the rift works but it was freezing the Dargyns and then after killing the Dargyn I was able to snipe the pilot. Knocked it out twice (One for melee and one for pistol) in about 10-15 minutes on free-roam plains.

Find some pilots on the ground, rush in with your rhino and do a long duration stomp, then kill in the air. Hopefully that still works. In short the dargyns count as ground for some reason. So if killed in dargyn or if they die by impact it won't count. More often than not if you kill the dargyn the pilot isn't dead yet.

If by drones you mean the Dargyns, then yes, it can be impossible to hit them with certain weapons.
